My reference at the time listed Alpinia zerumbet as hardy to 10 degrees F. I planted two outdoors in different locations to see whether they could survive with winter protection. I planned to cover them as I had covered a palm tree the previous winter. I noticed the new tubers seemed to grow on top of the older ones toward the soil surface, and I planted them about three inches deep.
